The Minnesota hot dish (elsewhere called a casserole) is a one-dish supper (or side dish) baked in your oven using a single piece of cookware. Use fresh ingredients (no canned soups) and do easy preparation for a family meal or make an impressive, elegant company fare for friends or crowd-pleasing recipes for a potluck. Join us to create sensational dishes including: Beef, Pork and Sauerkraut; Pork Loin with Dried Apricots and Cherries; Beef and Spinach (or Broccoli); Eggplant and Cheese; Chicken Cobbler with Carrots, Mushrooms and Peas; Lentils and Vegetables; and Baked Penne Pasta with Chicken and more! 

Laurel Severson

Laurel Severson, a former home economist in commercial food service, was also a recipe tester and editing expert. She is a popular, long-time instructor. Students enjoy being actively involved in her classes.
